Equipment:
Waffle Iron/ Waffle Maker: you can easily find this in your local market or online shopping site. You can start with a small and cheap one first. It works fine for me when I started with a 12$ Waffle Maker. If you decide to do it more often for your family then go ahead and pick a bigger and higher quality one.
Ingredients:
serving for 3 people - about 12 pieces of waffles
150g (1 cup) all purpose flour
40g (1/4 cup) corn starch * If you use cake flour, make it 190g (1 1/4 cup) cake flour.
4g (1 teaspoon) baking powder
2g (1/2 teaspoon) fine sea salt
40g (3 tablespoons) granulated sugar
2 whole eggs
160g (2/3 cup) whole milk
30g (3 tablespoons) oil
100g (1/2 cup) yogurt
Instructions:
Preheat the waffle iron/maker.
In a medium mixing bowl, crack 2 eggs, use a hand whisk to beat the eggs until you see lots of bubbles.
Add salt and sugar in the eggs, continue to whisk for a couple of minutes to combine them together and increase the volume of the mixture.
Mix all the liquids (milk, yogurt, oil) and continue to whisk until smooth.
Sift the flour (all purpose, cornstarch, baking powder) in the mixture and whisk until a batter forms.
Open the waffle iron. Spray with cooking oil. Pour the batter enough to fill up 1/2 - 3/4 of the iron (depending on how big you want your waffles to be). Cook until it is golden brown. It takes about 4 minutes or so. I usually wait until there is less steam coming out of the iron as a sign to open the lid and check.
